Optimising Seasonal Produce: Making the most of what’s on offer this Autumn

In the UK we’re blessed to have four very distinct seasons, gifting us with a wealth of diverse local produce. Each season brings a harvest of deliciously fresh seasonal food which can be used to create unique and creative culinary delights!

The landscape of the autumn season in the UK is one of warming, golden tones as the leaves turn and begin to fall. This is very much reflected in the gastronomic offerings, with warming soups and golden root vegetables beginning to feature in restaurant menus.

Why eat seasonal produce?

The beauty of utilising seasonal produce is that this is when the food is at its absolute best, meaning its fresher and tastes better. Whereas out of reason produce, for example strawberries are either grown in artificial conditions or shipping from another country. This impacts on the overall taste and can even lower the nutritional value.

Moreover, its far cheaper to eat seasonally, as locally sourced produce in seasonal abundance cost far less and of course, it’s a more natural and sustainable way of living.

Autumn Meat and Fish

Meat currently available and at their best in the UK now include, goose, grouse, guinea fowl, partridge, pheasant, rabbit, wood pigeon, venison, turkey, and duck. Seasonal fish include clams, oyster, skate, dab, brill, and Dover sole.

Seasonal Vegetables

The autumn season is truly rich with an outstanding array of seasonal vegetables, including beetroot, butternut squash, horseradish, swede, celeriac, artichoke, turnips, pumpkins, courgettes, fennel, marrow, leeks, and wild mushrooms.

Each vegetable has a distinct flavour, and many harmonise well together in soups, stews, and other dishes. For example, you could try combining earthy wild mushrooms and sweet leeks in a creamy autumn risotto.

Nuts and Herbs

There are some wonderful additional produce which can be used within your cooking to enhance flavour or add to the overall texture.

In season right now are cobnuts, chestnuts, and hazelnuts, which can be used in both sweet and savoury dishes.

Seasonal herbs include sorrel, thyme, sage, rosemary and oregano, all wonderful accompaniments to soups, casseroles, or roasted meats.
